Loaded Caramel Corn

Your guests won’t stop eating this, and is my go-to for entertaining during the holidays. Make sure to tag Oven Baked by Bianca or #ovenbakedbybianca to be featured if you try this out!

Ingredients

5 oz bag of salted popcorn

½ cup light corn syrup

1 cup light brown sugar

½ cup unsalted butter

½ tsp baking soda

1 tsp vanilla extract

5 oz mini marshmallows

1 tbsp unsalted butter (for melting marshmallows

Candy of choice

How to Make it

Preheat oven to 250 degrees Fahrenheit

Grease a roasting pan or deep dish with oil of choice

Place whole bag of popcorn in pan, and let this warm up in the oven while preparing the caramel

In a large saucepan, bring corn syrup, brown sugar, and butter to a boil over medium heat constantly stirring

Monitoring the heat, let this boil for 3 minutes without stirring

Take off the heat to add your baking soda and vanilla extract

Take your roasting pan out of the oven, and pour the caramel over your popcorn

Using two spatulas helps make sure every piece of popcorn gets covered

Place popcorn back into the oven for 40 minutes, making sure to move the popcorn around every ten minutes for even cooking

Five minutes before taking out the popcorn, melt your tablespoon of butter and marshmallows in a microwave safe bowl

It helps heat the marshmallows in increments of 30 seconds to prevent burning

When your popcorn is finished in the oven, take it out and immediately pour your marshmallow mixture over the popcorn

Using your two spatulas simultaneously also helps with this process to make sure everything gets coated in marshmallow

Lastly, taking your candy of choice, sprinkle pieces throughout your popcorn (I personally used mini candy-coated chocolate pieces)

Let the popcorn cool and break apart with a wooden spoon for easy munching!
