Lemon Chai Bundt Cake
Two of my favorite things in this life are a vanilla chai latte using the lemons that grow in my backyard every winter. I saw that Half Baked Harvest made a lemon chai cake on her blog and felt inspired to make my own. I served this Lemon Chai Bundt Cake at my recent dinner party, and let me just say that it disappeared in the blink of an eye.
In terms of decoration, this cake is simple yet elegant. However, when served on a cake stand, it is still the showstopper at the function. If you try this at home, please make sure you #OvenBakedbyBianca to show me how you made this!
Makes 8 Servings
Ingredients: The Cake
3 cups all-purpose flour
2 ½ teaspoons baking powder
½ teaspoon baking soda
3 bags of chai
2 teaspoons ground cinnamon
1 teaspoon all-spice
½ teaspoon salt
1 cup salted butter at room temperature (add ½ teaspoon more salt if using unsalted)
1 ¾ cup granulated sugar
3 large eggs
1 tablespoon vanilla extract
1 cup buttermilk (substitute: squeeze lemon in milk, let sit for 5 minutes to curdle)
1 tablespoon lemon zest
½ cup of lemon juice
Ingredients: The Icing
2 heaping cups powdered sugar
1 tablespoon lemon
½ cup water
How to Make It: The Cake
Preheat your oven to 350 degrees Fahrenheit.
Whisk flour, baking powder, baking soda, chai, cinnamon, all-spice, and salt in a large mixing bowl.
Beat butter and sugar with a hand or stand mixer for 3 minutes.
Scrape down the sides of the bowl with a rubber spatula, then add your eggs and vanilla.
Beat in eggs and vanilla for 2 minutes, then add in the buttermilk.
Add your dry ingredients gradually with the mixer on low.
Lastly, add your lemon zest and mix by hand with spatula.
Pour into heavily buttered and floured Bundt cake pan.
Bake for 45-50 minutes.
Let cool on the drying rack for 10 minutes, then flip over onto the drying rack to finish cooling.
How to Make It: The Icing
Using a traditional or electric whisk, combine the powdered sugar, water, and lemon juice until smooth consistency.
Feel free to add more of any of the ingredients to reach your desired consistency as well.
To Assemble
Place Bundt Cake on cake stand
Pour icing around the top of the cake and let it fall down the sides
Garnish the top with candied lemon peels or curls
